The Salvani Sugar Mill, located in Patnongon, Antique, is a privately owned muscovado sugar mill built in 1886 and is considered the oldest and largest in Panay. Located in Hacienda Salvani, a vast estate that provides jobs to locals and nearby communities. The mill features traditional sugar-making equipment, including a large furnace, mill, and metal “kawa” used for boiling sugarcane juice. Although some structures were rebuilt using cement and hollow blocks for compliance with modern standards, the original site and function remain intact. The mill is culturally significant not only for its economic impact but also for the annual ritual called paunay, a spiritual and social tradition among workers and owners. Maintained by the Salvani family, the structure is in good condition despite natural threats like storms and earthquakes.
